Bebek Entog ala Mela

Bahan-bahan: Bebek, 1 ekor

-serai

-jahe

-daun salam

-lengkuas

Bahan yang dihaluskan:

– Bawang merah, 7 siung

– Bawang putih, 5 siung

– Merica, 1 sdt

– Ketumbar, 1/2 sdt

– Kunyit, 5 cm

– Kemiri, 3 butir

– Jeruk wangi/purut, 5 lembar

– Garam, 1 sdt

– Gula pasir, 1sdt

– Gula merah secukupnya

– Santan kelapa 1 butir

Cara memasak :

1.  Rebus bebek selama kurang lebih 1 jam, kemudian dipotong menjadi 14 potong.

2.  Siapkan minyak dengan api sedang, tambahkan sedikit mentega kemudian masukkan bumbu yang sudah dihaluskan hingga harum dan berwarna kuning.

3.  Masukkan bebek yang sudah dipotong ditumis bersama bumbu.

4. Tambahkan sedikit air bersama serai, jahe, daun salam, dan lengkuas. Tunggu sampai daging bebek empuk, kurang lebih 30 menit.

4.  Setelah 30 menit masukkan santan dan tambahkan garam juga gula pasir secukupnya sesuai selera.

5.  Setelah mendidih angkat opor bebek yang sudah matang dan taburi dengan bawang merah goreng, sajikan bersama sambal dan lalapan.

Mela’s Bebek Entog

You will need:

One whole duck, some lemongrass, ginger, bay leaf, galangal and coconut milk from 1 coconut

Puree in food processor/blender:

7 shallots, 5 cloves garlic, 1 tsp pepper, 1/2 tsp coriander seeds, 5cm turmeric, 3 candlenuts, 5 kaffir lime leaves, 1 tsp salt, 1 tsp sugar, a dash of brown sugar.

How to cook:

Boil duck for about an hour and cut into 14 serving pieces. Stir fry the pureed spices in some oil and butter in a wok over low heat just until fragrant and golden yellow. Add the duck pieces into the frying pan, stir fry and coat with the fried spices; then add water, and the lemongrass, ginger, bay leaf and galangal into the pan and leave to simmer for about 30 minutes or until the duck seems tender. Add the coconut milk, and salt and sugar to taste; bring to a boil and remove from heat. Set aside to cool, then sprinkle with fried shallots and serve with fresh vegetables and chili paste on the side.
